Heavier, Sweeter! High Elevation Crops Have Longer Maturity Period

Farmers in the high grounds of Alamada, North Cotabato tell me that Corn takes longer to mature, taking at least 120 days or 4 months before harvesting, in the area.
It usually takes only 105 days for Corn to mature in the lowlands.
But they say that Sweet Corn planted in high elevation is sweeter and the grains are heavier.
I am seeing this now in the growth of our Sorghum in our Demo Farm in Rangayen, Alamada.
At 6 weeks old, the Sorghum are not as tall as those that we planted in the lowlands.
In fact, they look stunted at the stage when those planted the lowlands would have already started flowering.
I assume that just like Corn, it would take 120 days, instead of 105, for our Sorghum to mature.
Will the grains be heavier?
This would be an interesting experiment.
