Edamame, the favorite appetizer in Japanese restaurants which actually is just green young Soybeans in pods, may soon be coming from North Cotabato.
Edamame is actually young Soybeans harvested at 85 to 90 days old.
It is blanched in hot water with salt and served as appetizer.
Actually, it was a local chef Alex Sebastian, owner of my favorite Japanese Restaurant Robata, who gave me the idea on the income potentials of producing Edamame.
Alex said he serves imported Edamame which he buys for P450 per kilo.
Oftentimes, he said, it is not available.
After that conversation with Alex,I checked on my existing Soybeans in the field which is the local Manchuria White variety.
I found out, however, that the pods are a bit short, narrow and small with most of the pods having only 2 beans.
Early this morning, I checked on the new Soybeans variety from India which is starting to develop pods at 48 days old.
Seeing its large and wide green pods, I immediately recognized its potential in producing Edamame.
The Indian variety GZ 111 which I planted Jan. 2, showed wide and large pods with 3 beans in the pods.
This is the perfect variety for Edamame and after two more cycles which would take at least one year, I would have enough seeds for expansion.
With God’s grace, North Cotabato will hopefully start producing Edamame early 2025.
