Last night, the family had an advance birthday dinner for my second daughter, Dr. Josa Bernadette, in a literal hole-in-the-wall eatery in Davao City.
Golden Duck, a small restaurant with only four tables, serves roasted Peking Duck as their specialty dish.
The ducks were raised by German-Filipino couple Mark Willems and Juvelyn Mallorca Willems (a nurse originally from Midsayap, North Cotabato) in their farm in New Corella, Davao del Norte.
It was I who suggested to my daughter to explore the Peking Duck restaurant because I saw the couple’s post on Facebook.
It was only then when I found out that theirs is not actually a huge farm production, offering only about 30 roasted Peking Ducks per week.
Mark said the production faced challenges because of flooding and the poor power services of the DANECO marked by long brownouts affecting the incubators.
He also said that they sourced their Peking Duck breeders locally, so they are not as large as the imported ducks.
In spite of these challenges, the couple is hopeful that things would turn out right later.
Last night, the couple was so happy when I told them that their roasted duck taste was comparable to the imported ducks.
They were all the more inspired when I told them that I would source outstanding Peking Duck breeders for them.
