In the rural areas of Mindanao, especially in the Bangsamoro communities, there is a breed of free-range chicken which is distinctively different from the common breeds.
This breed, believed to have been brought to the southern Philippines by Islamic missionaries from East Asia, stands almost upright with large bodies weighing between 2.5 to 5 kilos and resistant to common poultry diseases.
It is called “Pauwakan,” “Basilan” and “Jolo,” a breed which serves as a source of food and entertainment as the roosters are used in a local sport called “Pauwak” or Naked-Heel Fighting.
I am breeding the “Pauwakan” in my farm because I use the roosters to cross with Heritage chicken hens to produce what I call the “Manok Pinoy.”
